Tomato Braised Cod Fillets

I'll admit that Cod isn't part of our regular meal rotation.  I suspect because prices for fresh Cod have been to high for it to hit my radar.  But this month, our local grocery has it for $6.99 a pound.  Ummmmm . . . hello Cod, nice to meet you.

If you aren't familiar, it is a firm white fish that produces large flakes when cooked.  It doesn't get mushy, instead it stays firm.  This makes it a great choice for fish sandwiches.  Which you may see soon!

The first time I purchased it, I wasn't sure how to prepare so I tried what felt like a "safe" preparation . . . I sprinkled it with some Greek Freak and braised in a tomato sauce with some wilted spinach.  Now that I've prepared it a few times and perfected the recipe, I have to share.  This is such a quick dish that it will not be part of our weeknight meal rotation!  As an added bonus, this dish is very low in fat and calories.

Let's go back to the Greek Freak seasoning . . . do you know about this stuff?  It's a Mediterranean seasoning blend that I first discovered while visiting a spice shop in Charleston, SC.  This is magic in a jar . . . I have yet to find something that doesn't taste fantastic with a sprinkle.  I was so sad to run out and then my son gifted me some for Mother's Day.  I was so confused at first.  Did he go to Charleston just to get this for me?  HA!  They carry it on Amazon (affiliate link - learn more here). . . perfect.
