Valentine's Day Coconut Macaroons

An every day recipe turns cupid catcher with the addition of a heart shaped Maraschino cherry on top.  A fan of all things coconut, these are a favorite at Christmas drizzled with chocolate, but for Valentine's Day, I love the white cookie with the pop of red on top.

I have tried others, but return to the recipe on the blue Baker's flaked coconut bag every time.  The only change is that I reduce the sugar from 2/3 cup to 1/2 cup.  This recipe makes 15 large cookies.

To make the cherry hearts, simply cut a cherry in half then cut a V shape in the top to create the heart shape.  To enhance the shape further, you can use scissors to shape the sides.

Package them up individually in a cello bag with a sweet ribbon closure as a sweet treat for the mailman (hey Nick!), your neighbors, colleagues or the kids' teachers.
