Buffalo Chicken Appetizer

So hey . . . I tested these at a family cookout this weekend . . . SCORE! I don’t think any recipe has been more requested at a single event than this one. EVER. I think the flavors are familiar to most, are easy to eat in a single bite, don’t require reheating or refrigeration and let’s face it - bite sized apps are just so cute.

Let’s talk chicken . . . I used leftovers from a store bought rotisserie chicken, but if you are planning to have chicken, any kind - baked chicken leg quarters, thighs or even broiled chicken breast - make a little extra to have on hand for this quick and easy appetizer.

The cheeses are really the base for this. I used cream cheese, bleu and mild cheddar. Bring the cream cheese to room temp and combine in a bowl. This is a stiff mixture. Use a fork to blend well.

Add your finely diced chicken.

Stir in the buffalo sauce. I used about three tablespoons, but adjust to your preference. Mine weren’t crazy spicy - even the kids ate them.

I used Athen brand pre-made phyllo cups for these. Each package has 15 shells, so I used two packages for this recipe. (Not sponsored - just a big fan!) You’ve seen me use them before on the Mushroom and Goat Cheese Appetizer. They are my biggest secret to producing quick and easy apps.

I grab several boxes when they are on sale and keep them in the freezer. This mixture perfectly filled 30 shells. They don’t bubble much, so there’s no worry of overflow. But for easy clean up, I always line my sheet with foil. No need to oil it either.

To garnish, I drizzle with ranch dressing and some finely diced celery! Serve warm or at room temperature.
