Coconut Panko Crusted Fish Sandwiches

It's coconut season at our house!  It was Coconut Macroons last week, and coming up will be a luscious Coconut Panna Cotta.

We have fish at least once a week at our house.  Our go to is a simple broiled salmon, but I've been trying to change it up.  Last week when Cod was on sale, I tried that braised with tomatoes and found it had potential to be our new family favorite.  But this week, I found these thick haddock fillets and decided to make a fish sandwich. 

By adding the coconut to the panko breading, it gives it a slight sweetness that interacts beautifully with the heat from the chili powder on the fish.  If you don't care for spice, forego the chili powder or replace with Old Bay Seasoning instead.  I love that the outside has a crisy crust and the inside is soft and flaky.

I fry these in just enough olive oil to give them a nice crispy, crust.

They come together very quickly, so this could easily be a weeknight dinner paired with a salad or soup.
